THE FRUGAL
GouanET
JEFF SMITH
Meet JefT Smith, star of The Frugal Gourmet the popular Public Ttelevision cooking series. He believes that frugal cooking is an attitude toward food, that frugal doesn't necessarily mean sparing. It can also mean getting the most for your money by buying the best meats, grains, fruits, and vegetables you can afford and putting them to the best possible use. And gourmet cooking doesn't require complicated recipes with dozens of ingredients. JefF Smith can turn two salmon steaks, soy sauce, ginger, and a few spices into a tasty meal that illustrates his principles of simple elegance and economy. In this book he will show you that with a little know-how around the kitchen, you can cook sumptuous dishes without wasting your time or your money.
Now you can duplicate in your own home all the techniques and recipes the Frugal Gourmet demonstrates on his programs. You will learn how to devise a homemade smoker, cook a Polish feast, barbecue... Tovább

You will learn how to devise a homemade smoker, cook a Polish feast, barbecue shrimp Mew Orleans-style, stuff a chicken with potatoes and olives, even how to make fabulous bread and yogurt from scratch. In no time you'll be preparing (continued on back flap)
(continued from front flap) dishes from Italian, Chinese, Ftench, Lebanese, Jewish, Spanish, Hungarian, Greek, and Armenian cuisines. There is also a special section featuring recipes low in salt, fat, and cholesterol.
In addition to his delicious, easy-to-follow recipes. The Frugal Gourmet
• gives you tips on proper kitchen equipment • defines cooking terms
• offers practical hints on how to remove skin from chicken • how to clean garlic • how to season your pans • how to tell when fish is really fresh. And there are more than a hundred lavish illustrations to remove the mystery from cooking.
With his uncomplicated techniques and high-quality recipes, the Frugal Gourmet proves that the preparation of good food can be simple and enjoyable, leaving you more time to celebrate the meal with friends and family.
Jerr Smith is an ordained minister and former chaplain at the University of Puget Sound in Tacoma. He became more involved with cooking after he taught a course called Food as Sacrament and Celebration. He believes that homemade food and the ritual of the table are "a drawing together of the people you love for a celebration, in the biblical tradition." And the joy in celebrating international cooking is absolutely linked to one's understanding and appreciation of different cultures. Cuisine is a way of thinking as much as a way of cooking. A popular lecturer in the Morthwest on food and wine history, he has appeared on numerous television and radio shows, as well as filming his own TV series. He lives in Tacoma, Washington, with his wife and two sons.
