Eor more than a decade, the three authors have been engaged in the field of preparation, kinetic study and industrial application of enzymes of plant, animal and microbial origin. In the present work they report their own investigations and summai'ize the I'esults of other researchers jiublished in the literature on plant a-l,4-glucan phosphorylase. In addition to discussing plant phosphorylases, the monograph describes the important characteristics of phosphorylases of animal and other origin, and the similarities and differences in the properties of the enzymes are compared.
The occurrence of a-l,4-glu-can phosphorylases is discussed, followed by an evaluation of the methods of preparation of these enzymes; the composition, structure, physical-chemical properties of the enzymes of plant and animal origin, the determination of the functional groups of the enzyme and the substrate are dealt with.
