Notes on the Use of this Book
1 The quantities for recipes in this book are given in metric and imperial measurement. Exact metric conversions would be difficult to work out, therefore metric equivalents have been used. Con version tables are given on page IX
2 VVeigh and measure as accurately as possible. Variation in quantity or measurement may mean adjustments in cooking time and temperature. Do not mix metric and imperial weights in one recipe as all measurements are proportionate.
3 Plairi flour should be used unless otherwise stated.
4 Standard or size 4 eggs should be used unless otherwise stated.
5 Use B.S.I. measuring spoons. All spoon measures are level unless otherwise stated.
6 Collect all ingredients and equipment required before commencing work and warm serving dishes where required.
7 If soft tub or table margarines are used for baking then they must be used straight from the refrigerator and not over-creamed. These types of margariné oil very quickly resulting in heavy cakes or cause an initial rise, then sínk in the middle. The use of lower oven temperatures for a longer time will prevent soft margarines oiling too quickly during cooking and will ensure a more even rise. Alternatively you may like to try the eme stage methods and recipes recommended by the margariné manufacturers.
8 Where an asterisk * is shown in somé recipes, this denotes that half quantities should be used for cooking in a second ovct ; or table cooker.
9 The recipes in this book give comparisons in cooking tempera- 1 tures between conventional main ovens, second ovens and fan | ovens. |
10 The recipes in this book make reference to shelf positions for conventional main oven at the top, middle and bottom. These indicate oven areas, ie. top third, middle third and bolton* third. For more specific shelf positions refer to the instruction leaflet supplied with your cooker. In second ovens, all cooking should be carried out on one of the lower runners (page V>. When piacing food in a fan oven, the shelf position is not critical (page VI).

This recipe book has been produced by the Home Economics Department and is aimed to assist you in achieving the very best from your new cooker. It will enable you to prepare meals and dishes to delight the people for whom you cook and of which you will be justly proud.
